The Soda Syphon or Seltzer Bottle is a device used for carbonating water. Its history dates back to the 18th century when natural springs of sparkling water were discovered in Europe. The first Soda Syphon was invented in 1829 by a Frenchman named Guy Gilbey. Soda Syphons became popular in Europe in the late 19th and early 20th centuries, particularly as a way of serving carbonated water in bars and restaurants. In the early 20th century, they were made from metal and were often used in homes. Today, they are still used by some bartenders, but have largely been replaced by modern soda makers that use disposable carbon dioxide cartridges.
